Seriously though, what do you want to know, umami is one of the 5 basic tastes that were four until the Japanese put thier 2 cents in. It means savory. Unimportant to me, the 4 are sufficient. But as always, that's just MY opinion.

I wondered if it was gimmicky kinda thing, or if you ever think about it when you're creating a dish. If you add anything to a dish to give it an extra somthin' somthin'.
