Rub it with a mixture of salt, black pepper, and garlic (add a pinch of cayenne and Mexican oregano if you’re feeling frisky). Do this in advance of cooking so the seasonings have a chance to do their thing. Let the meat come to room temperature before grilling over wood coals. Best at medium rare imho. After removing from the grill, let it sit for at least 10 minutes before carving. Note that the tri-tip’s grain goes two ways when carving.Anywho... got a tri-tip yesterday and was wondering what's the best way to prepare?
If you can’t grill, rub it with soft butter, sear it in a pan (iron skillet), then finish it in a 350 degree oven.
