How do you eat your steak? No offense to rednecks but recipes don't matter on steaks that are cooked well-done.

I use to always order mine rare untill my daughter got old enough to eat steak. Now I order it med rare. I hate grilling a steak for my wife. She likes it med well/well done. I know I'm ruining a good piece of meat...

Anyone have some good smoked or grilled salmon recipes for the grill later tonight? Before i simply just google around.

I use this often on Salmon, but as I said, It works well with chicken and beef.

Personally, I don't like my steaks marinated. With that said, I am forced to prepare certain items a certain way for others. I prefer this marinade with chicken and salmon, but it works really well on beef too.

1/2 cup pineapple juice
1/3 cup Captain Morgan rum
1/4 cup soy sauce
2 tablespoons brown sugar (packed)
1 tablespoon ginger, grated
2 cloves garlic, minced
1/2 teaspoon crushed red pepper
3 tablespoons olive oil
1/4 cup minced spanish onion
Juice of 1/4 of a lemon

Add "about" to all of the measurements... hahah I suck at them. I eyeball most everything and add to taste. Put whatever you are marinating in a ziplock bag and then the marinade. Put it in the fridge for at least 4 hours.

Salt and Pepper the Salmon then Spread a thin layer of Dijon mustard over the top of the filet.

Shred the horseradish root with a cheese grater like the consistancy of hashbrowns.

Dredge the filet in the root until the top is fully covered.

Bake it at 350 degrees for about 12 minutes (that should give you a MR to medium filet.)

This is where I suck! I'm all about "about"

In a sauce pan, simmer about a half a cup of soy sauce, add about 2 teaspoons of prepared wasabi and about a half teaspoon of brown sugar. Simmer it until it gets thicker (like tabasco) add some flour or starch if you need to (I prefer flour).

Drizzle over the finished filet. A little ginger is a nice compliment.
