What did you have for dinner II?

When I bicycle toured the Amalfi coast in 2018, they served pasta with little more than olive oil or olive oil and butter. A few baby San Marzano tomatoes or shrimp might accompany the pasta. Pasta was served before the entree. Our guides tried to discourage some of our US group from demanding milled Parmesan cheese and burying the pasta under it, but my sister-in-law led the insistent minority every time.

That sounds fantastic!

it actually was very good. I’ve started to add more Sweet Potatoes to my diet and experimenting with different recipes. This one was a keeper. I used Olive Oil instead of Coconut Oil, which I did not have.

Thanks! We go through some sweet taters. I'll have to try this. I have found that there IS something about using coconut oil with sweet potatoes though. I don't use any other oil on them when roasting or frying them.

These are old southern things and people have looked at me crazy when I say how much I love them.

Anybody ever make some white rice and then add butter and sugar to it? My mom used to make that for me when I was young and I still have it occasionally.

It's kind of like peanut butter and mayonnaise sandwiches (probably my all-time favorite sandwich). Used to be a popular thing in the south, but has kind of faded away over time.

My god, I haven't thought about those in years. I may have to make the "sweet rice" soon. Mamaw used to make it.

My grandma on my dad's side ner had real snacks, occasionally donuts. When we were little, she'd give us a piece of loaf bread with karo syrup. As a kid, man it was good 🤣

I'm not big on mayo, in general. Of course, I didn't think fries dipped in milk shake would be good either.
That is something I have never been able to enjoy. I've tried it several times over the years because my girls love fries in a frosty. That and peanuts in mountain dew. But I know people that love it.
