IMO its like if some Jamaicans decided they were gonna do authentic American BBQ, and did it Memphis style. Seriously. Yea I'm bustin on TFG but what if the Jamaicans that were having it had eaten Texas style or Carolina style? And what if they cooked it in the oven instead of smoking it? Or used Cattleman's BBQ sauce? Like our BBQ, Jerk ain't just a seasoning or sauce, its a process.
Anyway, tifwiw. Make sure you use "Ground Allspice". There are spices in the spice section called Allspice and it aint the same. I'm not sure what she got going on with that recipe, but IMO it needs 1/2 teaspoon of nutmeg and 1 teaspoon of cinnamon added. I appreciate her mention of the pimento wood, that can be that "umph" that's usually missing. Pimento pellets are available here at Home Depot, so are wood chips.
I have a recipe I've used for a sauce. I use a seasoning for the meat and leave it on overnight, then cook it in a red stripe, pineapple juice and ketchup sauce....yea I know, blah blah blah. I still won't eat it on a hot dog.
