His charcoal side not big enough for this method. He cooks em for 6 hours in that small area they’ll be hard as asphalt & taste like sidewalk. Pay more attention before giving dumb advice3-2-1 method

wrap in foil and cook for 2 hours at 225
unwrap and cook for 1 hour at 225. baste at this stage if u eat them wet (which is wrong way)

mesquite can over power yer meat if u cook too long with it. i avoid it. i usually use pecan apple or cherry woodActually having thought about its mesquite I'm thinking of. No sources, just have heard some mention mesquite smoked food and associated w/ heartburn
