I'm gonna eat about 50 pounds of Sushi once I can find a place open and not packed to the gills with fatties like me.
I got into sushi late in the game, so I'm still middle of road on full raw stuff. It's the texture of a slice of raw fish more than flavor or thought of what I'm eating. But, I love certain preparations. I have not yet tried the sashimi, just a straight raw slice on rice. The salmon might be different, but it was the feel and sound of the raw yellowfin that keeps me a dedicated novice.
Cookeville, TN has a really good place, Taiko. Never regretted anything I have tried there. Most things I get now are lightly seared stuff. Taiko has a Taiko fried rice that is basically snow crab fried rice and is mega addictive.
First place I ever ate sushi was Ru Sans in Athens, GA. Their regular menu is crazy good, and the sushi is superb. I got a roll that was huge, as in diameter. It had salmon and tuna, and cream cheese and a couple other things. then each slice was dipped and tempura fried, but the fish was never more than done than Med Rare. It was awesome, and a good choice for beginners instead of that wimpy California Roll.
Actually, the owner of Taiko in Cookeville, is also the owner of House of Thai, and Rice Time Bistro. All in Cookeville. House of Thai is pretty good, and more of his upscale offering as Cookeville goes. But, there is no Asian food in Cookeville that can touch Rice Time. General Tso's and his buddies down at the china buffet is a joke compared to real Asian food. Their menu offering is prepared more like traditional street venders would cook in Thailand. You can menu order, or get from the bar (not public buffet, you point, they plate). really good eats.
