Behr, I think I asked you this before, and I'm sorry to actually put the thread title to use, but can you break down when to use each type of onion? And how much difference it makes?

Examples: Adding onion to Fajitas- which onion?
Adding onion to Tater Soup (or any soup for that matter)?
I know you don't eat chili, but if you made chili, which onion?
Omelette onion type?
Etc, etc, etc....

Short answer...

If a recipe calls for onion, use a yellow. They're the the most common for cooking.

White are sweeter and best to use raw.

Red are a bit sweeter than the white but, they are mostly used for aesthetics.

Shallots mostly used for sauces. They're the sweetest. Well, next to pearl but they're only good for martinis IMO.
