What did you have for dinner II?

Homemade hot wings. This was batch 1. Batch two didn’t last for a pic. Batch 3 almost ready

Papa johns yesterday. We put homemade beef stew in the crockpot this morning before church. It is absolutely delicious! Instead of buying the pre cut stew meat, I bought a small chuck roast and we cut it up ourselves. It’s so good.

Jealous. Never had homemade shrimp n grits

This is a "quick" version but it's quite tasty and it's easy to multiply the recipe for a crowd.

Easy Shrimp & Grits

3-4 strips of bacon crumbled
3 cups of broth (chicken, seafood, or shrimp (from shells)
1 cup of half & half
1 ½ cup quick cooking grits
1 ½ cup of sharp cheddar cheese
1 can of Original or Mild Ro-Tel
1 tbsp bacon grease
1 clove of garlic (minced)
1-1 ½ pound of medium 30/50 count shrimp
1 tsp Old Bay seasoning

1. Preheat oven to 350
2. In a medium heavy-bottom pot, bring the broth & half & half to a boil. Add the grits and reduce heat to low. Stir occasionally for 8-10 minutes. Add the cheese, stir until melted, remove from heat, and add Ro-Tel. Set aside.
3. In a skillet add the oil over medium low heat. Add the garlic for 30 seconds. Increase the heat to medium and add shrimp and Old Bay for about 1 minute. Shrimp will not be cooked.
4. Pour the grits into a 2 ½ quart casserole dish and gently fold in the shrimp.
5. Cover and bake for 40 minutes
6. Garnish with green onions, if desired.
