I had one of that same design when I lived in Texas. It had a freakin' trailer hitch on it because of the size and weight. I cold smoked a lot of meat on that thing.
As predicted, I had beer. Also, sliced up some smoked sausage and fried it up with some onions, peppers and garlic. Used a mix of mayo, mustard and Sriracha for a dipping sauce.
