Bone in is the only way to go with wings. It gives them more flavour.

On a side note Kat. I thought you liked to go bone to bone.
 
omg i didn't know the ham was around their femur until thanksgiving day!!! after dinner i was helping my momma and cutting the ham off the bone and then all of a sudden there's the femoral head. i bout freaked

I'm using a mix from Honey Baked ham that has fresh whites, lentils, black eyed peas, black beans, red beans, kidneys, limas, green peas, great northerns, etc, etc.....

I've used it before and it's pretty tasty.
 
It finally got cold here. Low in the 40's tonight.

I leave the bone in for a couple hours, take it out and then chop remaining meat to add an hour later. Definitely good on a cold day.
