About once every summer I make a Southern Gazpacho recipe that I adapted from some chef that used to have a cooking show on the Sports South channel. It's great when the weather's hot, your appetite is for something cool, light and spicy, with maybe some bread croutons or something on the side for crunch. It's especially good and satisfying when you have fresh veggies from your garden to make it with. :eek:k:

Green Curry Beef - wasn't thrilled with the green curry sauce I bought but the rest (beef, onion, peas, cashews and grape tomatoes) was pretty good. Served it up with jasmine rice and an eggroll.

I took it out of the freezer and put it in the oven...:)

Made everything else but the curry sauce though. Oh and the ice cream sammich I had for dessert.
What kind of ice cream sammich. They have a wide variety these days: chocolate outside, neopolitan inside; chocolate outside, chocolate inside; Vanilla outside, strawberry inside. Very confusing for those of us used to chocolate outside and vanilla inside. :unsure:

Well - it sucked is what kind. It's a Klondike 100 calorie version and the cookie part really sucked. Had some Skinny Cow ones last week that were much better except they were round.

Overall, I'm an old schooler like you. It should be chocolate outside, vanilla ice cream inside and rectangular. Also the ice cream should be soft enough to try to eat it by licking all the way around until the cookie sides bend in.

My wife has been buying those Skinny Cows lately. Not bad for a reduced calorie product.

Personally, I prefer a pack of Sour Skittles for a quick desert, but apparently you're supposed to avoid such things when you develop type 2 diabetes. :whistling:
 
Tandoori chicken, basmatti rice, nam bread from Best of India in west Nashville.

It was good. Not the best Indian food I've had, but not bad. We did seem to have a bit of communication breakdown with the waiter.

Went buck wild at cuban joint in richmond last night. Spinach & ricotta empanadillas, tostones, plantain encrusted halibut with rice and cuban black beans. Washed down with cuban coffee. So good but way too much food.

Tonight it was a nice MLT: a mutton, lettuce and tomato sandwich, where the mutton is nice and lean and the tomato is ripe. They're so perky, I love that. No wait, it was a BLT. Nevermind.
 
Tonight we had fried chicken, mashed potatoes, corn from my garden, and as always washed it down with sweet tea. Oh yeah the wife made homemade butter pecan ice cream, yummy.
