Let the steaks come to room temperature (very important). Get a seasoned iron skillet smoking hot. Add salt and pepper to the steaks and throw 'em in the skillet. Depending on the thickness, let them sear for 3-5 minutes then flip. After the second side has seared, add butter and fresh garlic. Spoon the melted garlic over the steaks then take off the heat and let them rest.
