What did you have for dinner?

I put my skillet in the oven and crank it to 500. When my oven reaches that temp, I pull the skillet out and put it on the stove top that is on high. I quickly put the steaks on and don't touch for about 1 1/2 to 2 minutes. Then flip and do the same on the other side. After that, put it back in the oven for about 4 minutes (medium rare)

They were closer to medium, but I swear, it's the best steak I've ever made here at the house! Holy cow!

When I pulled the hot skillet out of the oven, I put some olive oil and butter in it, along with two smushed garlic cloves. I had put salt and pepper on the steaks while they were coming to room temp. Did it just like you said. I put them on a plate to rest after taking them back out of the oven, then added shallots to the skillet for a minute. I put fresh spinach in the skillet and wilted it, a little nutmeg on top, and served with rice (an Uncle Ben's bag in the microwave thing that wasn't good, but I needed a starch on the plate.)

Winner!!

Yeah it's about the only way I do steaks in the winter. In the summer I just use my skillet on the grill :)

It was pretty good.....will perfect to be better than my favorite takeout next time. I substituted the black vinegar with balsalmic. You can get black vinegar on Amazon.

Gotcha. Hubby LOVES kung pao chicken! Where did you get the chilis? (I've never looked for them, so if it's a stupid question and they are easy to get, ignore me. :redface:)

I normally shop at fresh market or whole foods but I'm sure most grocers carry them in the oriental section

Try putting black vinegar in a bowl along with chopped green onion, then add peanuts and let them soak. Got hooked on this in China at the bar.
