I put my skillet in the oven and crank it to 500. When my oven reaches that temp, I pull the skillet out and put it on the stove top that is on high. I quickly put the steaks on and don't touch for about 1 1/2 to 2 minutes. Then flip and do the same on the other side. After that, put it back in the oven for about 4 minutes (medium rare)
They were closer to medium, but I swear, it's the best steak I've ever made here at the house! Holy cow!
When I pulled the hot skillet out of the oven, I put some olive oil and butter in it, along with two smushed garlic cloves. I had put salt and pepper on the steaks while they were coming to room temp. Did it just like you said. I put them on a plate to rest after taking them back out of the oven, then added shallots to the skillet for a minute. I put fresh spinach in the skillet and wilted it, a little nutmeg on top, and served with rice (an Uncle Ben's bag in the microwave thing that wasn't good, but I needed a starch on the plate.)
