This was clean out the fridge leftover Wednesday for me. Had some leftover tomatoes, okra, corn and pinto beans from the last few days. Put is all in a pot on simmer. Caramelized some chopped onions, diced celery and garlic and added it. Also, put in half a cup of water and about a cup of cooked rice. Seasoned it with ground black pepper, a pinch or two of Cajun seasoning and a squirt of Sriracha. Minced a small amount of cilantro and stirred it in. A pinch of cumin, pinch of sugar and teaspoon or so of lime juice. Simmered for about 45 minutes. Not bad.
