What did you have for dinner II?

The payoff relative to the amount of work in this recipe is top 3 for me.

I have to make up extra things to do, like fry up the andouille slices first.

btw, for anyone looking at the recipe, I don’t add the shrimp until 6 minutes before I expect it to be done. With all the extra veggies, I generally cook it 15-16 minutes at 400°, so at 9 or 10 minutes after the air fryer starts the countdown, I add in the shrimp. So far, this gives great results for texture with both the veggies and shrimp.

Me too! Between Waffle and Huddle House, Huddle house wins out imo. The portions might be a little larger than normal. Reminds me of Cracker Barrel lol...

As far as what I had for dinner today, I had an early dinner and had pinto beans, salmon patties and Mac and cheese.

I bought them at a Colombian Bakery.
The pork was from a Puerto Rican restaurant and the donuts from a donut shop owned by a Mexican woman.

I tried making empanadas once. Too much work and too much of a mess. Easier to just buy them and get the Aji sauce at the same time.

I’ve made them using puff pastry; baked in the oven (not fried.) Mine were with a Cuban-style beef picadillo. I would never have thought that olives and raisins would work so well together.
 


I've been there at night (but not after midnight) and never got the ol dinner and a show that Waffle House is known for 😄 However, that SNL skit instantly came to mind when you mentioned that.

I saw someone get put through a window on 3rd shift one time. There was a biker bar up the road back then. It made for the occasional interesting night.
 
I mean Kemosabe's on Boone Creek Rd. No idea what is there now. I used to live in the town houses next to Bob Evans. But I'm not out that way much these days.

Oh yeah... I know where you're talking about. I used to go to a church out that way. As far as dinner today..... Baked spaghetti 🍝
