Here is the recipe we have been using:
- 1-stick of butter
- 1-large onion chopped
- 2-bell peppers chopped
- 6-jalapenos chopped & seeded (leave some seeds for heat)
- 1/2-cup flour
- 6-cups chicken broth
- 4-cups heavy cream
- 4-cups colby jack cheese shredded
- salt & pepper
In large soup pan, melt butter
Add onions & peppers
cook for about 10 minutes
Add flour & cook for about 2 minutes, stir constantly
Slowly add broth
reduce heat & simmer for about 10 minutes
Add cream, salt, pepper, and mix thoroughly
Add cheese & stir until melted
That is the way we had always made it. I thought that making chicken breasts in the slow cooker and shredding them added quite a bit to the recipe. It was delicious.
I think I am going to add garlic & cilantro next time.
