What did you have for dinner II?

BBQ shack in toccoa Georgia. Smoked half chicken, Brunswick stew, and slaw

I haven't been to Toccoa in years! Used to hike at Blood Mountain. We weren't fancy enough (kidding) to find a decent restaurant. Always stopped at Awful Waffle leaving Kennesaw and got ham sammiches wrapped in foil for later.

You are a great cook! I don't know what reverse-seared means.

Thank you! Reverse-seared means you slow cook the steak at about 225 degrees in the oven first, until it reaches about 115 degrees internal temperature. This takes about 30 minutes in my oven. Then, blast it with heat in a cast iron skillet for 2-3 minutes per side, while butter-basting it, so the steak has a nice crust on the outside, but is still juicy and pink on the inside. Reverse-searing is supposed to be a way to help prevent overcooking, but I still manage to overcook it when I do this method. I was going for a medium rare, but I got much closer to medium.
 
That's funny! If it's your first ticket in a while (5 years, maybe, ) they'll "let" you go to driving school. Catch is that the class costs as much as the ticket would. The state is gonna get their money. At least the class keeps the citation off your record and doesn't mess w insurance premium.
Yes I went to driving school last year in Oak Ridge because I had a few tickets, but hopefully I can get through this year with no more.
