Looks really good to me, and I bet that it was!!

The beef is short rib. She marinated the eggs in soy sauce, ginger, green onion, and red pepper. Then add shredded carrots and edamame in a miso broth. If was yummy.

Cheese is fine, low carb tortilla…for me tortillas, tortilla chips, beans and rice is the hardest part of a low carb diet..

On the Georgia coast, I had a similar dish - fajitas fixin’s served over rice at a restaurant.
