What did you have for dinner II?

Our own Vee-En-Ee gets creative in the kitchen, prepping and cooking on the fly - doctoring up a frozen cheese pizza (Oh yeah, let’s put some of that on there), tossing together a skillet meal. For these dinners off the cuff, I’ve coined the term “Exie Salad.” Ok, she’s yet to post of a salad meal, but that’s not the point. The point is creative meal prep on the fly. We’ve all done it, but, for her latest efforts, I’ve wished that I’d been invited to the table. This I know you get. My own spontaneous creations will now fall under the term “Exie Salad” with the hope that they turn out delicious and satisfying. The next time you just make something up as you go and it turns out delicious and satisfying, tell us about your “Exie Salad.”

We had dinner at 3 (hi @malinoisvol!) so that I would be freed up to drink beer and yell at the TV later:

Pan-fried wild-caught tilapia with a white wine/ lemon/ shallot sauce with butter, thyme, oregano
Steamed asparagus with a thinned cheese sauce
