Never posted to this subforum before, and didn't take pics because my phone was downstairs.
Nothing fancy.
My daughter and two of our grandkids live here with my wife and me, and the youngens have been wanting some bacon for a while, so last night I set out four packs to thaw
(1) "Killed" lettuce and onions (cut the first batch of black-seeded lettuce from my containers out back today and Vidalia onions sliced thinly with a mandoline) in a lotta hot bacon grease and a bit of vinegar
(2) pretty decent storebought squash sliced thinly with mandoline, coat each slice with ev olive oil, put on baking sheet, sprinkle with sea salt and Lawry's seasoned pepper, and cover each slice with parm cheese (to make it crispy), 350/25 mins, broiler 2 mins on HI to make em even more crispy...raised on fried squash, don't like slimy squash, but like this baked squash better than I like the fried
3) BLTs minus the T, because I couldn't find any decent ones at the store, and it's too early for homegrown here....used the most mature of the lettuce I had grown for the L, and there was a mountain of bacon on the counter that disappeared pretty doggone quickly
We all ate until we were about to pop. NO LEFTOVERS. I really believe if ole Ben Matlock had been here, he would've said, "Them's good eats." HAHAHA
