What did you have for dinner II?

So the fajitas and carnitas are going to have to wait awhile (so much so that the meat is in the freezer). Had a bowl of chili tonight, and I’ve got three bowls to go, 3 servings of chicken and rice, four servings of loaded potato soup with salad, and two remaining servings of beef tacos.

You need help with that, wish I lived closer. Went to a Mexican restaurant named My Favorite Place and had grilled shrimp chimichanga with rice and refried beans.

Saturday night, I attempted to make duck confit on the stove top in my cast iron dutch oven. I removed and rendered some of the easily accessible fat from the four duck leg quarters. Then, I place the pieces skin side down into the fat and rendered the subcutaneous fat (crisped up the skin real nice, too). Turning the heat down low, I flipped the leg quarters over and let them "poach" in hot fat. The leg quarters were tender and tasty (Yes, Behr, I saved the fat, afterwards).

My missus made a Gruyere cheese potato casserole (what I'd call cheesy scalloped taters) and green peas as accompaniments.
