Last night was homemade burgers with cheddar and bacon, piled high with extra cheese and bacon, homegrown tomatoes, lettuce, onion, and double fried fries so they were extra crispy.
There is a BBQ place in Palmetto, FL that serves smoked pork shanks that look very similar in size/shape. They are the best things on the menu, bar none.
Kevin smoked a pork butt today, fabulous! Served with lemon pepper zucchini and some new crappy mushroom rice recipe I tried. Will have to doctor up the leftovers.
So the fajitas and carnitas are going to have to wait awhile (so much so that the meat is in the freezer). Had a bowl of chili tonight, and I’ve got three bowls to go, 3 servings of chicken and rice, four servings of loaded potato soup with salad, and two remaining servings of beef tacos.
