I’ve made chicken salad again with diced celery, onions, peppers, walnuts, tarragon, and vegan mayo with a pinch of five spices powder. I’m serving it with baby spinach in a roll up having the thinnest schmear of Neufchâtel fairy dusted with fine ground cayenne.

Went to Church Hill for the weekend. One night was frozen pizza and salad, one night was Pals.
Two nights at my sisters house. She fixed pork. chops with gravy, green beans with mashed potatoes and gravy, (forgot picture).
Saturday she made a carnitas roast for tacos and it was SO good!!.

For an early lunch after church,I had a bean burrito from a local place near where my lady lives. For dinner, fried potatoes,baked beans and some diced hot dog weinees. Not the healthiest ,but I felt tired all day long from lack of sleep and it was one of those days.

One does not normally just, travel to Church Hill for authentic Mexican fare.
