What did you have for dinner II?

I am roasting lemon pepper chicken leg quarters which will be accompanied by carrots and asparagus spears.

Edit: I had intended to prepare maple syrup candied carrots, something I’ve not done for decades. My wife instructed me to wait more decades. This deflects my intent to prepare dishes from yesteryear, but, hey, the missus has spoken. I bet she’ll butter the cooked carrots on her plate.

I love carrots that have been roasted or braised, but not sweetened first. Eeeewwwww. Hated them since I was a kid.

IMO, fall-harvested root vegetables (carrots, onions, etc.) have plenty of sugar already and don’t need extra. Just me tho.

As I mentioned, it’s a recipe I’ve not made in decades. If I wasn’t on a yesteryear kick, I wouldn’t have considered it.

What’s your next time-warp meal? At some point, I’m going to have to take on my grandmother’s chicken and dumplings. Hubs has claimed for years that he’s low-carb *cough cough*, but it’s pretty obvious from his new love of bean stew that this is flexible. So I’m running out of excuses!

I made maple carrots topped with chopped pecans last year at Thanksgiving. So good!
