What did you have for dinner II?

Throw Together Thursday aka What's in the fridge/pantry, and what can we make with it?

Pasta with Shrimp dish.
~1 lb of medium/large white shrimp
2/3 of the trinity (green pepper, onion - no celery)
2" square of Pecorino Romano cheese
1/2 teaspoon garlic butter
1&1/2 tablespoons Ricotta cheese
4 slices bacon
4 handfuls of mostaccioli rigati noodles
1/2 cup unoaked(?) Chardonnay
olive oil

While the noodles were cooking to al dente...
Milled the pecorino romano
Sauteed diced onion & pepper in a tablespoon of bacon drippings, the 1/2 teaspoon of garlic butter, and a tablespoon of olive oil
added the wine and turned up the heat to reduce a bit
Reduced the heat, added the shrimp
When shrimp almost done, added ricotta & stirred to blend in
Added ~1/2 cup of the pecorino romano & blended in
Strained the noodles, tossed them in a drizzle of olive oil, added these
Stirred the mixture to blend and bring to even heat (shrimp perfectly done)

Served in bowls topped with pecorino romano cheese, crumbled bacon, and freshly milled black pepper

The wife liked it. I may just make this again. On purpose.

Had BBQ my last night in the Great State. Not the same as having it in Memphis as I usually do when visiting, but it was still solid.
 
Ribeye, baked potato, and salad. Strawberry cheesecake ice cream for dessert!
 
Had a burger at Ferg's which is across the street from Tropicana Field where Ethan Wolf played in the East West Shrine Game today.
 
Steve Spurrier’s brother and family are regulars at a Johnson City bar-restaurant called the Cottage which is only minutes from my childhood home. Their version (and thus mine) version of hamburger steak isn’t what most consider. It’s this and I love it. I marinade the burgers in Worcestershire and a hamburger seasoning by McCormick. Sauté onions, peppers, jalapeños and mushrooms for the top and boom. I’m back home.

I guess it’s all in how you make it, but it was only about 550 calories. No cheese, bacon, and buns take a lot of calories away.

Edit: the veggies might make it look like more beef. It’s only about ten ounces of hamburger. 93/7 variety

Gotcha...love the idea of jalaps in it! That has to add another depth to it. Well done.

on days I do a long run or a really big time workout, I'd add the fries. Can't afford those calories today :).

I love it though. one of my all time favorite meals.

My wife will be gone for over a week starting next Sat.

Your recipe is on my "to-try" list. I have some local grass fed 90/10 that should work for this recipe. Can't wait to try it. Thanks for sharing. :good!:
 
Beef tenderloin w/dizzy pig dry rub, sweet potatoes, asparagus marinated, and peppers cooked caveman style. All on the Green egg with pecan smoke.
