Not sure how this will help you, but the largest concentration of vol fans in NOLA is probably in Gentilly, at the New Orleans Baptist Theological Seminary. That campus is typically a miniature SEC, with every school south of Kentucky and east of Texas well represented. There might be a community bulletin board there you could post on, see who's interested. Obviously that's not going to be a big drinking crowd, which IMHO improves the game experience among strangers (yes, even if Verne & Gary are calling the game).
Pre-Katrina, I remember there was a house that flew a Vols porch flag on one of the side streets near Vincent's on St. Charles... maybe Fern Street? I lived in NOLA 20 years, until 4:30 AM the Saturday before K made landfall.
Back in the Dooley days, I'm guessing you could find Vol fans after the game wherever Fats Domino was playing. They'd have been the ones requesting "Ain't That a Shame" and "Blue Monday."
