Im surprised yall dont know about breakfast tacos but then I remember, Im in Texas and yall are in a part of the south more known for grits that Mexican food. Typically a damn good taco has eggs, chorizo, and some hot sauce all wrapped in a handmade tortilla.

we had some mexicans working at the mill. they would eat "real" mexican food. not stuff from the local mexican restraunt. food was great but not great for you. they tended to use the lesser grade more fatty meats(i'm sure thats why it had better flavor). they knew how to make it hot too.:yes: I stayed away from the cow tounge. smelt good but I couldn't get past the look...
 
it took me a while to try their food. I would always turn it down. I gave in one day and was suprised. them guys could cook. they would make fresh salsa that would blow any restraunt or store bought away.
 
Well there is certainly a diffrence in Tex-Mex and authentic Mexican food. Cabrito, chorizo, meneudo, barbacoa ect.. are all legit tell tale signs you're in a real Mexican food place. If they are peddeling nachos, quesadillas, and cheese enchilladas, they are Tex-Mex.
