Pureeing the roasted and soaked dried chiles. Forgot to add the chipotles in adobo and had to do them separately

I tasted the chili before adding the purée peppers, and it was plenty hot. It is now lethal.

Cook for five more hours, add Mexican chocolate and masa harina, cook another half hour

I want to thank you for accidentally getting me thinking about not always using a spice mix from a jar. (A post a couple of years ago about scratch red enchilada or chile sauce, I think.) I’m not going to do this on a weekly basis, but for special occasions, it is da bomb.

I’m now getting up the courage to cook Indian. Talk about spice wrangling.
