Is that from a restaurant? If you cooked it I would expect more of the sauce to be cooked into the meat. Well if it was me it would’ve been cooked into the meat instead of the sauce being poured on after the cooking is finished. 😋
yes the place called Dreamland BBQ - where I ordered a bottle of the sauce from -- I like mine the same way you described but not many places do it that way maybe @Behr would know why

Probably because it's more cost effective to cook them without and it's more versatile, meaning that customers that are picky and want "light on the sauce" or extra sauce, or no sauce, or a different sauce etc.
