The last time I had a GOOD Hush Puppy was at Wilburs BBQ in Goldsboro, NC.

I've battered them with cornmeal, seasoned flour and beer batter. The beer battered are pure awesomeness, but more of a pita than the others. Seasoned flour is better than cornmeal, IMO.

My mother makes the absolute BEST beer battered fish!

Mom always does 2 batches. 1 with beer batter and one with corn meal. Both are absolutely delicious.
