Actually had a person, young guy, about two years ago get up say fawk you and walk out during one of these type messages.

He ain't PC.

I always thought washing mushrooms in a water bath was a bad thing because they'll absorb the moisture....

I don't like getting stuff like this off the internet, but Alton Brown is my Favorite "Scientist Chef"...I've been washing mushrooms like this, 3-5 cases a day for 30 years.

For the record, Alton Brown tested washing mushrooms to see how much water was retained. Barring an overnight soak, the mushrooms hardly retained water at all and had no effect on cooking or flavor. It's safe to wash your mushrooms ...

Calm down, I just thought you might want more evidence than just my word. I know there is alot of stuff out there you could find that would contridict me. Jacques is a cooking god to me, and no one is better than Alton when it comes to the chemistry side of the culinary arts. Hes fascinating.

Yep, I loved watching Alton's shows.

I tried to get tickets to Alton's show here a while back, wanted to take my step daughter and daughter in loves.

Freaking pop up collar foodies start that chit and put it on their blog. Haha. I don't know. I guess it sounds like it makes sense so they run with it. Maybe it's the paper towel companies trying to sell more paper towels, or salad spinner companies trying to sell salad spinners. ???

I’ve always assumed Souce has popped his collar a time or dozen during his life
