Hi @Behr, since you were clearly being a deek in the other thread, I thought I would ask a follow up question here. I purchased some yellow curry paste and want to make a thai curry dish tonight. I know most Thai restaurants add carrots and potatoes to their yellow curry, but what other veggies would match well with this type of curry? I was thinking about adding zucchini, green bell pepper, and mushrooms. Haven't decided if I'll add protein or not. If I do it will be either sliced pork tenderloin or fresh shrimp.
 
Anything you want will work, but you can can alter the flavors and kick it up another notch and another level. You'd need to go to an Asian market for some kaffir lime rind and leaves, but it would be amazing. You can also use some fresh ginger, lemongrass and or shallots along with or without the kaffir. Those ingredients are used in the paste itself, but adding a little to a dish will bring the flavors out and be more defined. You can add a little coconut milk too. Garnishing whatever it is with a little fresh coriander or basil.

I wasn't being a deek, I just wondered why it mattered if I liked it or not.

It matters because I don't want your advice if you don't like the dish!!!! i.e. your chili recipe is complete horse chit!
