This is the one like the ones my wife and I caught offshore once. They're really flat and are VICIOUS fighters for their size. The crew cleaned them, as I recall, and we took them home. They're VERY GOOD eating, I think.
There are several types of triggerfish that come up when you Google it. This is the gray triggerfish below.
I also Googled parrot fish, and their shape is somewhat similar, but parrot fish can change their sex several times a year, it says. @joevol33

Gray Ocean Trigger. We used to shoot them at the end of the dive surfacing. Would catch then hanging at about 40 ft. Skin is like leather and sand paper.
