My question is this – my brother-in-law has eight deer head mounts at his house. I can get one and put it up on my office. Is it ethical to put someone else’s deer head in your office so long as if I’m asked about it, i give credit to the brother-in-law? Same goes for a duck mount that I have from a good friend of mine.

You need to tell people "that deer ran over my grandma one Christmas". Then concoct an elaborate revenge story about how you tracked it over air, land, and sea but in the end you finally got the S.O.B. Bonus points if the story is just a thinly veiled retelling of John Wick, Taken, or other such movie.

Not without being reported to the authorities. Had a friend one time that got 6 months probation for displaying someone else's trophy, and he didn't even try to claim it was his own. Better not have any PETA friends in the circle.

WUT? I've never heard of displaying someone else's mounts being illegal anywhere.

Friend in HS did taxidermy as a hobby and didn't have his license (why a license is needed is beyond me) and was raided by VADWR. Luckily he didn't have any out of season or illegal trophies but he still got a big fine and probation.
Yeah, it's odd to have to be licensed for that, but my guess is that is to manage them to the seasonal game laws and critter possession. An above the table texidermist won't touch a non-tagged or non-registered critter.
