The Romans sacrificed a pure white bull at the Temple of Jupiter on January 1, when the new pair of consuls gave their oaths of office (all Roman politically elected offices were for 1 year). They drugged the crap out of it before they brought it to the ceremony. The temple slaves slit the bull's throat and the blood flowed down a channel. If the bull misbehaved there was a backup slave with a big hammer. That got messy. Any blood on anyone's white toga was seen as one of the worst omens possible for the coming year. That's when things could get messy, but 9/10 the bull just hung out and got his throat slit and everyone was happy.
