If I only had one, it'd be Bear fat. I've had the privilege of using it on special occasions, but it's really expensive and not easy to find.
But, speaking about a more common fat and could only have one, I'd still go with pork fat. It's just more versatile, IMO. Love to fry some taters in goose fat though!
