I dont think I have gotten them "dry" enough when I've fixed them fresh. They have good flavor, just a mushy texture.

I'm pretty sure I wasn't. I'm unaware of the correct terminology, if there is one, but if he was talking about rice I would agree. I "flip" hashbrowns.
