No you weren't comin off a one Brah, thought a professional would do it different..

I used to butcher my own deer every year, except for one. I took it to a processor to have burger and sausage made. I would cut the roast off of the front and hind quarters and soak them in iced salt water for 6-8 hours, then like Sly said, cut them against the grain in about 1-1 1/2 inch slices.

I liked to marinate it in Dr. Pe....I mean Wishbone Italian dressing with red, green peppers, mushrooms and onions about an hour or two. Then grill it to MR and hoped everyone else hated it.
 
so you brine yours?

I don't really consider it "brining", but yes. After the deer is shot, lays in the woods for an hour before I find it and field dress it, drag it to the truck, drive home, hang it in a tree and butcher it.....I do soak the meat in ice cold salt water for 6-8 hours. Then I freeze and label the packages.

I will never do it any differently.

we let our deer hang in the cooler for a few days before we cut em up. Like I said before, I dont eat much deer meat. About the only deer I eat is processed sausage. I normally keep a hind quarter to make jerky out of for my boy, he loves it.

I never had a cooler big enough. Deer sausage is the bomb. Grilled!

I haven't had much time to get on VN lately but I know there are alot of Chattanooga folks and beer drinkers here in the Zone. I just wanted to share my status from the beer thread in the pub in case any of yall are interested.
