Why do soft foods like bread get hard when the get stale but hard foods like cookies get soft? How do they know?

Well professor, if this question is on one of your quizzes, it's probably the only one I would get correct.
 
It had more to do with behr waiting 7 hours to see me on screen. Shoulda added a no homo at the end of his sentence.
 
so what's the answer?

Little to no oil, eggs, butter creams or sugar (which absorb moisture) in most breads and that's pretty much all a cookie is.

Edit: By the way, I wasn't being a smartass, I know you are a professor.
