I am very interested in jhen's procedure in frying a Turkey.

Do you bread it?
Do you inject it?
Do you marinate it?
How Big of a Turkey do you use?
How hot is your oil?
How much oil do you use Per pound?
What type of oil do you use?
I only ask because, I'm trying to master the art of "Turkey Frying".....I'm not kidding.

I don't bread it
I normally inject it the day before with a cajun marinade but I'm gonna try a brine on this one. it's a little less work than the brine I used for smoking. It doesn't call for any seasoning but brown sugar and osher salt but I'm gonna add my own. Deep-Fried Turkey Recipe : Alton Brown : Food Network
I have heard that it is best to use a fresh turkey(not frozen) under 14 lb
I use to let my oil get up to 350 and try to maintain it after I put my turkey in. This recipe says to put the turkey in at 250 and work it up to 350.
I always use peanut oil and have never known a certin amount to use but I try to visualize how much I think I'm gonna need to cover the whole turkey and a little bit more.(I buy it in a 3.5 gallon container)
I am not a professional by no means but anything I can do to help I will.
 
In My Opinion, you are doing it right jhen. A bird 12-14 lbs is perfect for the grease, I use Calnola(75%) Olive oil(25%), but that really doesn't matter unless you are gonna use it to fry fish, fries, meat or chicken all day. I would suggest marinating the oil, thats a seceret (sp?) that Alton will not give.

I'm gonna do like you suggested and put some garlic and rosemary in the oil the night before. I never thought about seasoning the oil. Thanks for the idea.

Stuff the turkey with the garlic and rosemary, then use it for a dip for bread.
 
Yooper ur a northern now us good ole boys a.k.a southern boys dont like them there northern people...:lol:
