I would like Muschamp or Harbaugh, but I've got to think they'd be more short-timers (Muschamp to Tex when/if it opens in a couple of years and Harbaugh to the NFL). Knoxville/Tennessee would be a downgrade from Austin/Texas for Muschamp within the range of coaching/recruiting/living comparisons. Patterson or Petersen are probably the best out of the realistic choices.

If we're talking about fantasy land... Gruden or Cowher. But that's about as possible as me waking up tomorrow morning in Bangladesh.
