I lived North of Millington, TN in the early 90’s. There was a restaurant that had brains and eggs on the menu.
A guy next me ordered them. Pig brains mixed in scrambled eggs.
They didn’t leave much of an impression. We, my siblings and I, were exposed to all manners of veggies and cultural cuisine. Mom had a dog eared Betty Crocker binder stuffed with additional recipes.
