Growing up my father and I were allergic to shellfish but we loved Cajun food even though Tennessee born and bred.My mother made zgumbo with chicken instead of shrimp, put catfish,chicken ,smoked sausage was terrific.To the day I make it for my grandkids they love it

Gumbo is like, watcha got! Chicken/sausage is really popular even at high end Cajun establishments.

Got a lot of venison in the freezer courtesy of my oldest son. He now hunts a quasi exurban area that is flush with deer.
