Was the bacon fully cooked on both sides? I've tried this and it was slimy and grey on the side next to the meatloaf. Do you flip the bacon? Pre-cook a bit?
nah, that's what happens, the good stuff from the bacon seeps down in to the 'real meat' and makes it all good and stuff.
i do bacon wrapped pork tenderloins on the grill. the outside gets good and charred, but the inside, is as you described.
the tenerloin underneath....mmmmmm.
same thing happens if you do bacn wrapped burgers.
