Last time I was in NYC, there was a "resort/amenities fee", a "destination fee", "credit card surcharge", etc.

The seven major felony offenses were 50% higher under Giuliani in 2000 than they have been at any point in the last 20 years. It's a stupid question. Junk fees are also called resort fees or a million other things. Have you figured out that they aren't taxes yet?
Resort and amenities fee is common if it's higher end hotels. If the generics are charging this then yes it's a junk fee. The latter two are good examples of a junk fee.

Dude, these are absolutely junk fees. They are adding $2 of value and charging $50-75 a night....

If NYC is charging then they are gouging. This doesn't happen in most areas. This sounds like a New York problem. And yes, if you are staying in Vegas hotel where there is gambling, restaurants, nightclubs, shopping, etc then you are paying a resort fee. If you are staying in a motel then you won't have a resort fee.
