On a serious note:

Teachers , Public or private (most do an excellent job with not near enough compensation, parental support, or gratitude)

Farmers: think it's bad depending on someone else for our oil, won't compare to the day we depend on someone else for our food.

Doctors, Nurses and EMT for the amazing way they take care of us.

those are the ones that just popped into my head

Any occupation so long as the practitioner takes their job seriously and gives a crap about doing it right!
