That's a decision made by the businesses and it's probably to attract interest from omnivores. Vegetarians and vegans aren't putting pressure on food manufacturers to make their food more closely resemble butchered animals. They simply want more options to feed themselves something without animal ingredients.
There are 7 and a half billion mouths to feed. If they all were to eat like Americans there will be far less forest land in order meet the demand to grow animals. Actually it's probably not sustainable.
