I really prefer mine on the medium rare (a nice warm pink) side whereas I would think the behavior in this thread might be tending toward well done and extra crispy.

Unless you are getting a Kobe steak the difference isn’t that great and I have eaten at the Ruth Chris in Destin, Nashville, and Louisville. Better then Mitchell’s though but not as good as Morton’s in Columbus. Mitchell’s is a joke in my opinion and I always leave hungry.
I like the Ocean Club a lot but if you are just getting a regular steak Texas Roadhouse is not much different than RC.
Kayne Prime blows them all away though. Wife’s favorite restaurant.
