I'm agreeing with you. When I say stir the hot grease in loosely, that does what you are suggesting only better.

Try it my way--you are not too old to learn a new trick are you? My mamma taught that and she made the best in the world for forty on my years.

This has already been discussed. The best recipe is on the back of the Martha White Self Rising Cornmeal Mix bag. Make ONLY with Buttermilk and use 2 eggs. I NEVER dump the grease in the cornbread, I pour straight in with the grease. This effectively fries the bread as it expands out in the skillet and rises giving a MUCH crispier and brown bottom and side. And I repeat, DO NOT CUT THE PONE IN THE SKILLET!

My momma poured the grease in. How you do it doesn't matter.

My sister does it that way. Doesn't leave enough in the pan. I literally deep fry the bread as I pour it in and it rises up the side. I prefer my way and I make better cornbread than yo mama!

Edit: I make it better than my mom too! My grandmother made it on top of the stove and would flip it half way through and it would brown on both sides. My mom watched that for all her years at home and could never replicate it.

When we are feeling jiggy we put whole kernel corn and chopped up jalapenos in it.

Also, I feel the same way about sugar in the pone as I do the woo. Pure silliness started by yankees.

I use about a quarter cup.......also, I use Butter Tast'in Crisco. That is another secret. It makes a difference.

Bacon grease in with the mix. I'll have to try the butter Crisco.

What you were talking about on top of the stove - my grandmother always called that a hoecake.

I am talking about a full size pone, flipped in the skillet. I like hoe cakes too! Butter and honey on them!

I'm going to try heating up some bacon grease and putting it in the batter, that sounds damn good!
